Mines are rather situational. On some maps the tank movement paths are predictable and there the mines can be very useful. On more open maps where tanks can move in through anywhere, the mine usage is harder to pull off.

When playing RE mines just pay off brutally.
Every immobilized tank will die, no matter what tank.

The problem is when playing PE, you're not able to defuse mines even with all the unlocks the panzergranediers can't detect mines even when there's one unlock that actually says that you're able to detect mines when your inf is standing, so the only thing you have to detect mines is the ketenkrad wich neither can defuse mines.

For PE, there's a way to make the mine detection for panzergrenadiers actually work, but it takes a lot of shift clicking:

Maybe it would be more practical to have the unlock enable the german mine detector upgrade costing 15 muni for the Panzergrenadiers.

I'd really appreciate if the basic panzergrendadier squad could get a minesweeper upgrade too. It'd also make me actually care about having one of them around at all times rather than rely more on the other infantry squads or doctrine specific squads unless I need to build a tech structure.

I use them but can't lay a whole line of them in one go like you can in vanilla COH.

This was changed because if in the "line" one mine exploded, it often set off the entire line. You can hold "shift" when you're placing mines and will allow you to do multiple clicks and lay a mine at each place you clicked.
