When i upgrade a squad with rifle-grenades, does it make someone from the squad to stop firing his weapon? Is it like a bazooka/panzerschreck?

No it does not. Riflegrenades work similarly to Panzerfaust - you upgrade it, soldiers keep their weapons and one soldier switches to the upgraded gun only when you activate an ability.
